Passito is made by a careful selection of perfectly healthy and sparse bunches of Erbaluce grapes from "La Fiorita" vineyard in the municipality of Borgomasino ( morainic origin’s land). The grapes are picked up the end of September and hanged up to be dried out according to the best Canavese tradition. In the first days of March, after undergoing five months drying, the grapes are slowly selected and pressed. The must is left to ferment into steel drum and aged for 3 years in wooden barrels.

Sensory notes
Color: bright straw yellow, with evident golden reflections close to amber
Bouquet: full, intense, ethereal, of great complexity, with evident hints of dried and canned fruit, light toasted nuances, and sweet notes.
Taste: sweet, full, harmonious, enchanting, good a structure with slight almond flavour.
